Asturian fabada my way, without meat

Asturian Fabada is a typical dish from Asturias, a region in north-western Spain. The original recipe is a soup made with white beans, called fabes, and several types of meat, including sausages and bacon. Today we will see a healthier version of the dish, without meat but with lots of vegetables, tempeh and mushrooms. The perfect side dish for fabada is a slice of wholemeal bread or black rice, in order to ensure a complete dish from a nutritional point of view, capable of providing all the essential amino acids we need, antioxidants, minerals, proteins and carbohydrates. And then fabada is so tasty, also thanks to spices such as paprika and saffron. In short, here is a perfect recipe for autumn evenings that are starting to get cooler! Enjoy your meal.
Ingredients for 4 people
- 800 grams of already cooked large white beans
- 1 leek
- 1 onion
- 1 clove of garlic
- 200 grams of seitan
- 4-5 button mushrooms
- 2 tomatoes
- 2 courgettes
- 1/2 teaspoon sweet paprika powder
- 1 sachet of saffron powder
- Extra virgin olive oil
- 1 l of vegetable broth
- Sea salt
Preparation
Clean the mushrooms with a damp cloth and cut them into slices. Cut the courgettes into cubes, the tomatoes into pieces, mince the garlic and slice the onion and leek. In a large pan, brown the garlic, onion and leek in extra virgin olive oil.
Then add the mushrooms, tomatoes and courgettes and cook for ten minutes. Season with paprika and mix. Blend the vegetables with the immersion blender. Pour in the broth and beans and cook for another ten minutes. In the meantime, cut the seitan into small pieces and brown it in a pan with a drizzle of extra virgin olive oil. Finally, add the seitan to the soup. At the end of cooking, add the saffron diluted in a little broth and mix. Add a pinch of salt, if needed. Serve this delight with wholemeal bread or black rice.
